VINO CHIANTI D.O.C.G. DOCG dei Colli
I do it with the traditional way
of the "rigoverno alla toscana": it consist to put in
the new wine a little part of grapes who have still start the
fermentation. All this give to the product a kind flavour, and
help to complete the transformation of the sugars to alcohol -
which could be difficult with sweet grapes produced by old wineplants.
I put the wine into oak barriques to age it which gives it the
wood-flavour. After it I put it in bottle.
